Asha Bhosle's Culinary Legacy: From Kitchen to Global Restaurant Chain
The passing of legendary singer Asha Bhosle at age 92 has left the nation in mourning, but beyond her musical genius lies a remarkable culinary story. While honored with prestigious awards including the Padma Vibhushan (2008) and Dadasaheb Phalke Award (2001), Bhosle was equally passionate about food, creating an enduring legacy through her award-winning restaurant chain, Asha's Indian Contemporary Cuisine.
From Recording Studio to Kitchen
In a heartfelt interview with Curly Tales in July 2024 at her Dubai restaurant, Bhosle revealed her deep emotional connection to cooking. Dressed in a pastel sari with a pristine white chef coat and cap, she expressed, "I feel so happy wearing a chef coat and cap. It feels like I'm wearing some fancy and expensive dress."
Her culinary journey began as a necessity when her son Anand demanded home-cooked meals. "I used to return from recording sessions and, still in my work clothes, would wash my hands and immediately start cooking mutton, chicken, and biryani for my son," she recalled. These dishes became family favorites and eventually inspired the creation of her restaurant chain.
The Birth of a Restaurant Empire
Years later, Anand decided to honor his mother's passion by opening a restaurant that would celebrate her culinary talents alongside her busy singing career. This marked the beginning of Asha's Indian Contemporary Cuisine, which has grown into an internationally recognized fine dining establishment known for authentic North-West Indian cuisine and elegant presentation.
A Lifelong Culinary Student
Despite initially knowing only a few dishes, Bhosle transformed travel into her culinary classroom. Wherever she performed internationally, she would engage with local communities to learn about their traditional dishes and cooking techniques. She would then improvise these recipes with her personal touch, incorporating those unique flavors into her restaurant menus.
Her culinary education included learning Maa Ki Dal from Peshawari communities and Momos from actress Mala Sinha. This continuous learning approach allowed her to develop a diverse menu that now serves customers across approximately 14 global locations.
The Indian Touch to Global Cuisines
Bhosle maintained a strong Indian identity in her culinary approach. While appreciating international cuisines, she mastered the art of adding Indian "tadka" (tempering) to dishes from around the world. She shared, "When visiting Italian restaurants, I simply ask for oil, salt, and chili. I mix these together and apply it to their breads, enjoying all cuisines with an Indian touch."
Feeding Others with Passion
More than just a passionate eater, Bhosle loved feeding people at home. While renowned for her prawn curry, she was also skilled at preparing numerous seafood dishes including Fish Biryani and Banana Leaf Fish Fry. Her generosity in sharing meals became a defining characteristic of both her personal life and restaurant philosophy.
