- 1 cinnamon stick
- 2 cloves
- 1 cup finely chopped onions
- 1 tablespoon ginger-garlic paste
- 1/2 cup tomato puree

- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 cup fresh cream
- 1/4 cup milk
- Salt to taste
- 1 tablespoon sugar (optional)

Method
Making the Kofta:
- In a bowl, combine grated paneer, mashed potato, cornflour, cashews, raisins, ginger-green chili paste, and salt. Mix well to form a smooth dough.
- Divide the mixture into equal portions and shape them into round balls.
- Heat oil in a deep pan over medium heat. Fry the kofta balls until golden brown and crispy. Drain on paper towels and set aside.
Preparing the Gravy:
- In a separate pan, heat butter or ghee. Add bay leaf, cinnamon, and cloves. Saute for a few seconds until fragrant.
- Add chopped onions and cook until translucent. Stir in ginger-garlic paste and saute until the raw smell disappears.
- Add tomato puree and cook until the oil separates from the mixture.
- Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2 minutes.
- Reduce heat to low and slowly stir in fresh cream and milk. Simmer for 5 minutes, stirring occasionally. Adjust seasoning and add sugar if desired.
Assembling the Dish:
- Just before serving, gently place the fried kofta balls into the warm gravy. Do not boil after adding kofta, as they may become soggy.
- Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
