Ingredients

For the Kofta:

  • 1 cup grated paneer
  • 1/2 cup boiled and mashed potato
  • 2 tablespoons cornflour

  • 1 teaspoon ginger-green chili paste
  • Salt to taste

  • 1/2 cup fresh cream
  • 1/4 cup milk
  • Salt to taste
  • 1 tablespoon sugar (optional)
  • Fresh coriander for garnish

Method

Making the Kofta:

  1. In a bowl, combine grated paneer, mashed potato, cornflour, cashews, raisins, ginger-green chili paste, and salt. Mix well to form a smooth dough.
  2. Divide the mixture into equal portions and shape them into round balls.
  3. Heat oil in a deep pan over medium heat. Fry the kofta balls until golden brown and crispy. Drain on paper towels and set aside.

Preparing the Gravy:

  1. In a separate pan, heat butter or ghee. Add bay leaf, cinnamon, and cloves. Saute for a few seconds until fragrant.
  2. Add chopped onions and cook until translucent. Stir in ginger-garlic paste and saute until the raw smell disappears.
  3. Add tomato puree and cook until the oil separates from the mixture.
  4. Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2 minutes.
  5. Reduce heat to low and slowly stir in fresh cream and milk. Simmer for 5 minutes, stirring occasionally. Adjust seasoning and add sugar if desired.

Assembling the Dish:

  1. Just before serving, gently place the fried kofta balls into the warm gravy. Do not boil after adding kofta, as they may become soggy.
  2. Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
