Bengaluru Dhabas Fined Rs 1.45 Lakh for Hygiene Violations

Bengaluru Highway Dhabas Face Heavy Fines for Hygiene Violations

The Karnataka Health Department has recently conducted a series of inspections on highway dhabas in Bengaluru, imposing significant fines totaling Rs 1.45 lakh for violations of food quality and hygiene standards. According to a report from NDTV Food, these inspections targeted 41 dhabas, with 16 food samples collected for laboratory testing to ensure compliance with safety regulations.

Details of the Inspection and Fines

During the operation, specific stretches of highways were scrutinized. On the Nelamangala–Tumakuru road, eight dhabas were inspected, four samples were taken, and fines of approximately Rs 30,000 were levied. Similarly, the Nelamangala–Kunigal stretch saw nine dhabas checked, four samples collected, and a hefty fine of Rs 85,000 imposed. Additionally, eight dhabas on the Tumakuru–Chitradurga highway were fined Rs 30,000 for similar infractions. This crackdown highlights growing concerns over public health and food safety in informal dining establishments.

Six Common Hygiene Issues at Dhabas and How to Address Them

While these fines serve as a wake-up call for business owners, they also underscore the importance of customer awareness. Here are six prevalent hygiene problems at dhabas and practical steps you can take to mitigate risks.

Poor Hand Hygiene Among Staff

Dhabas often operate with a rustic approach, where food handlers may not wash their hands frequently or properly. This negligence can lead to bacterial contamination during food preparation and serving, posing serious health risks. To protect yourself, always observe the hygiene practices of the staff and politely request that servers wash their hands before handling your food.

Unclean Utensils and Surfaces

Many dhabas employ untrained local staff who may lack awareness of basic cleanliness standards. This often results in dirty dishes, glasses, and cooking utensils that emit unpleasant odors and harbor bacteria. In some cases, utensils are washed in the same water repeatedly, accumulating grease and harmful microbes. As a precaution, ask for utensils to be cleaned in front of you and consider using a tissue to wipe them down before use.

Exposure to Dust and Flies

Located primarily on highways, dhabas are vulnerable to environmental contaminants like dust, pollution, and flies due to their open structures. These elements can carry germs that contaminate food, increasing the likelihood of illness. Ensure that all food items are properly covered and reheated before consumption to reduce exposure risks.

Improper Food Storage Practices

Even with modern appliances like refrigerators, hygiene levels at dhabas can be questionable. Cooked food left uncovered, whether inside or outside the fridge, creates an ideal breeding ground for bacteria. Before dining, inspect the general cleanliness of the establishment. If anything seems amiss, opt for packaged food alternatives to stay safe.

Use of Unsafe Water Sources

Local dhabas frequently rely on regular tap water for cooking, cleaning, and drinking, which raises the risk of waterborne diseases such as gut infections and diarrhea. To avoid this, always consume packaged water and verify that the seal on the bottle is intact before drinking.

Poor Waste Management Systems

Garbage disposal is often neglected at dhabas, leading to overstuffed dustbins, untidy surroundings, and foul odors that attract pests like flies and insects. While customers have limited control over this issue, it is crucial for business owners to maintain basic hygiene by keeping waste bins closed and positioned away from dining areas.

This recent enforcement action by the Karnataka Health Department serves as a critical reminder for both dhaba operators and patrons to prioritize hygiene. By staying vigilant and adopting these simple measures, you can enjoy the unique culinary experience of dhabas while safeguarding your health.
