  • A pinch of asafoetida (hing)
  • 6-8 curry leaves
  • 2 dry red chilies
  • Fresh coriander leaves for garnish

Instructions

  1. Prepare the yogurt mixture: In a bowl, whisk the yogurt and gram flour together until smooth. Add water and continue whisking to avoid lumps. Add ginger-green chili paste, turmeric powder, and salt. Mix well.
  2. Temper the spices: Heat oil or ghee in a deep pan on medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, fenugreek seeds (if using), asafoetida, curry leaves, and dry red chilies. Sauté for a few seconds until fragrant.
  3. Cook the kadhi: Pour the yogurt mixture into the pan and stir continuously. Bring it to a gentle boil on low-medium heat, stirring frequently to prevent curdling. Let it simmer for about 10 minutes until it thickens slightly. Adjust the consistency by adding more water if needed.
  4. Garnish and serve: Turn off the heat and garnish with fresh coriander leaves. Serve hot with steamed rice or khichdi. For extra flavour, you can also add a pinch of roasted cumin powder and red chili powder on top.
