Chef Sanjyot Keer Reflects on MasterChef Return and Culinary Journey
Chef Sanjyot Keer on MasterChef Return and Food Lab Vision

Chef Sanjyot Keer's MasterChef Homecoming: A Decade of Culinary Evolution

The culinary arts represent one of the most demanding and specialized skill sets to master. Combining flavors, freshness, innovation, and nostalgia on a single plate presents a formidable challenge. However, Chef Sanjyot Keer appears to have solved this complex puzzle. With his creative approach and deep passion for cooking, this distinguished alumnus of 'MasterChef India' is elevating culinary art to unprecedented heights.

Recently, he made a special appearance as a guest on the latest season of 'MasterChef India,' presenting contestants with an intricate challenge. In an exclusive conversation, he shared insights about returning to the iconic set and his ongoing mission to advance flavor profiles and culinary presentation.

The Emotional Return to MasterChef Kitchen

What was your initial emotion upon returning to the MasterChef India set?

"My heart overflowed with gratitude," Chef Keer revealed. "For a moment, everything seemed to pause. For more than ten years, I've been constructing, innovating, and progressing with a singular vision: to present Indian cuisine globally in a manner that feels authentic, meticulous, and deeply connected to our rich culinary heritage."

He continued, "Through Your Food Lab, we've demonstrated daily how Indian food can be showcased on digital platforms and how its narratives can be shared. When you're immersed in that cycle of creation and advancement, you seldom stop to reflect. But stepping back into the MasterChef kitchen brought stillness. It transported me to 2015, when I first entered that same kitchen behind the camera, learning from some of India's finest culinary experts."

"Returning as a special judge after a decade didn't feel like a victory celebration. It felt like coming home. It reinforced how far consistent effort, patience, clear vision, perseverance, and self-belief can carry you."

Innovative Cook-Along Challenge with High Stakes

Your appearance involved judging, hosting, and cooking alongside contestants. What was the philosophy behind this multifaceted role?

"Cook-along challenges on MasterChef occur only a few times each season and are typically led by resident judges," Chef Keer explained. "Being invited to lead one was genuinely humbling. This format resonates deeply with me due to our work on Your Food Lab. Our cook-along series, Chef It Up, has completed two seasons, with Season 1 winning the YouTube Works Award for Best Branded Series. We established a structured, competitive cook-along format in India through that platform."

He elaborated, "This challenge was similar but with higher stakes—contestants faced elimination. I had to present a recipe demanding technical skill, flavor balance, precise timing, and artistic plating, and they needed to replicate it perfectly. Having worked behind the scenes on MasterChef, I understand what succeeds on that stage. Considerable thought went into the dish."

"I aimed to remain faithful to my foundation—Indian cuisine. I presented a recipe inspired by Lucknow's basket chaat. Instead of the traditional tokri, I used a savory ghewar from Rajasthan, transforming a dessert into a honeycomb-style hexagonal base. There were four distinct baskets, each representing a reimagined chaat variation, incorporating nearly thirty components."

The dish featured lesser-known Indian ingredients such as Bandel cheese, Kachampuli from Coorg, and Bhuransh flowers from the Himalayas. "On MasterChef, you cannot simply replicate a chaat. It requires skill, surprise, and structure. The dish needed to challenge technique while staying true to flavor. I wanted India to shine through every element, with technique, nuance, and flavor. It was demanding but profoundly satisfying, and I was genuinely impressed by how the contestants met the challenge."

From MasterChef to Your Food Lab: Identifying a Digital Gap

Was there a specific moment during your early MasterChef days that inspired Your Food Lab?

"Working on MasterChef provided firsthand exposure to television production at scale, showing how food is structured, presented, dramatized, and consumed by millions," Chef Keer recalled. "The show offered India a new perspective on food through competition, pressure, and performance. Simultaneously, I observed another trend: recipe-driven food shows had become stagnant, following a fixed format for years."

"Around 2016, a fundamental shift occurred: internet access expanded, smartphones became ubiquitous, and digital screens emerged as the primary consumption medium. Yet, no one was approaching food from the perspective of how it should be authentically presented on digital platforms. I recognized that gap as an opportunity."

He emphasized, "I strongly believed that food itself should be the hero. Remove unnecessary clutter. Focus on clarity, technique, and storytelling rooted in Indian cuisine. If Indian food could be presented beautifully, simply, and with depth on digital platforms, it could transform the entire ecosystem."

Personal Significance Beyond Headlines

On a personal level, what does this MasterChef return signify beyond media attention?

"Beyond headlines, it serves as a reminder," Chef Keer reflected. "A reminder that beginnings are important. That quiet learning matters. That consistent dedication over years matters. This return isn't about nostalgia. It's about gratitude. It's about understanding that if you remain committed long enough, life sometimes brings you back to where you started—just from a different perspective."

He concluded, "But this moment isn't solely about me. It belongs to every viewer who watched our videos, attempted the recipes, cooked for their families, sent encouraging messages, and believed they would see me back in that kitchen on the other side. For everyone who supported this journey, this achievement is for them."
